The potato salad of my youth consisted of boiled potatoes, onions, chopped parsley and copious quantities of mayonnaise.  We would only ever eat it at BBQs and I would always pile it on my plate.  I always liked it but it was certainly not the kind of food I would dream about.

A few years ago I had potato salad cooked by a nice Austrian man.  It was really good, I had never had potato salad like it before.  Recently I saw a few recipes for German potato salad and I remembered when I first ate this dish and I had to eat it again.

This is a really easy recipe and it tastes delicious.  I sometimes eat it as a meal or as a side at a BBQ.  I encourage you all to give it a go.

Kartoffelsalat (German Potato Salad)

Ingredients

1 kg Desiree potatoes
4 rashers Bacon, chopped (I used a mixture of bacon and speck I had left over)
1 Onion, finely diced
¼ cup Apple cider vinegar
1 tbsp Dijon mustard
1 tsp Sugar
1 tsp Salt
Chopped parsley, to serve

Method

  1. Boil potatoes in their skins for 15 minutes.
  2. Meanwhile in a frypan fry bacon over a medium heat until crisp and set aside on absorbent paper.
  3. Over a medium heat fry onions in bacon drippings until translucent.  Add vinegar, mustard and sugar then simmer for 10 minutes over a low heat.
  4. Chop boiled potatoes in to bite sized chunks and place in a salad bowl.  Add bacon, onion mixture and toss.  Serve topped with chopped parsley.
