
The potato salad of my youth consisted of boiled potatoes, onions, chopped parsley and copious quantities of mayonnaise. We would only ever eat it at BBQs and I would always pile it on my plate. I always liked it but it was certainly not the kind of food I would dream about.
A few years ago I had potato salad cooked by a nice Austrian man. It was really good, I had never had potato salad like it before. Recently I saw a few recipes for German potato salad and I remembered when I first ate this dish and I had to eat it again.
This is a really easy recipe and it tastes delicious. I sometimes eat it as a meal or as a side at a BBQ. I encourage you all to give it a go.

| 1 kg | Desiree potatoes | |
| 4 rashers | Bacon, chopped (I used a mixture of bacon and speck I had left over) | |
| 1 | Onion, finely diced | |
| ¼ cup | Apple cider vinegar | |
| 1 tbsp | Dijon mustard | |
| 1 tsp | Sugar | |
| 1 tsp | Salt | |
| Chopped parsley, to serve | ||

Welcome! (A belated welcome, but welcome nonetheless!) I remember having all-out-German-style feasts back in my high school days, and one of my favourite things to eat (apart from the schnitzel) was proper German potato salad. Love that mustardy/vinegary tang so much better than cloyingly sweet mayo!

I’ve made a similar version of potato salad before, minus the cider vinegar and with a few glugs of olive oil instead. It was for a friend who doesn’t eat mayonnaise (amongst quite a few other things!).

This looks really good. Using Apple cider vinegar in a potato salad is new to me. Will try it out for sure.

I’d eat this anytime of the day, with anything or by itself. I love potato salad and there’s no denying this is a great recipe (anything with bacon must be good!!!).

heheh. after all i’ve heard about this Kartoffelsalat from German lessons during my uni days, I’m pleased to finally find a recipe for it. Something my German teacher always said, which I think fits a food blog perfectly (translated to English):
“Potato salad does not count as (vegetable) salad!”

This reminds me of the “homemade hash brown” I had with my breakfast this morning, made of potatoes, mustard, parsley and red onion amongst possibly other things I couldn’t tell where in there. I have to say though… the hash brown could have benefited from some bacon. Nice salad

Love this salad, my sister can’t eat eggs so we had to find a recipe with no mayo. I add chopped cornichons and use seeded mustard, the seeds pop delightfully when eating this!

This looks like a very rustic dish that I would enjoy. I love potato salad especially when it’s not too fancy. I like how you used speck. It would have made this extra tasty.

It was about the same for me growing up..BBQs and Sizzler where the only times i think i got the chance to pile up my plate with mayo potato salad …
dijon mustard & apple cider combo sounds interesting.. will have to try it out.

this sounds very similar to Hete Blikem that AlmostBourdain just blogged about. I like how two different countries have a very similar dish with different names. loves a moreish creamy potato salad anytime… with bacons!
