I am a massive Dexter fan. The show is superb, the books are not that great. In season three (episode seven “Easy as Pie”) Dexter’s confidant Camilla Figg is hospitalised with terminal cancer so Dexter the very empathetic serial killer agrees to find her the perfect Key Lime Pie before she passes. I have never heard of this pie and was instantly interested. I know this is strange but whenever I am watching TV and they mention a food I am unfamiliar with I reach for my computer and Google it. I am told I am a little obsessed. I gleefully clicked through many different recipes in search of something authentic.
My search is complicated by the character Camilla as I continue to watch the show and Google simultaneously. In her bed ridden quest to eat the best pie she would critique each pie that dear Dexter would bring her with comments such as “this one has whipped cream folded into it” or “this one green food colour added to it”. Being a complete novice to these pies I take the quotes as sage words of wisdom in my pie quest. I continue clicking away until I get distracted by the next scene in the show.
More than a year later a friend mentions said pie to me again and I instantly know what they are talking about. And I want one, now! I don’t have a recipe to go to and my regular web resources fall short. What am I to do? I Google it once again and start trawling through recipes. I eventually settle on the first one on the list which is from Taste.
This pie is very easy to make and is very appropriate for anybody who doesn’t cook much as not many tools are required and there aren’t many things you can stuff up. Instead of using a food processor I put the biscuits in a freezer bag and pounded them into a fine crumb with a rolling pin. As a child I used to do this when I was helping Mum make Lemon Coconut Slice (another one of my favourites). I recommend doing this as it gives a better crumb, is a way to distress and also a good way to rope some assistance from a willing 3rd party into the kitchen. The texture of this pie is very much like a baked cheesecake which amazed me as there is no cream cheese. And the lime flavour is very prominent and pleasing.
To conclude Dexter is always right. There is no whipped cream or food dye in this recipe and Deb (Dexters sister in the show, and Michael C Hall’s wife in real life) is wrong (see below).
Dexter: Where can I get a good key lime pie?
Deb: You can’t, they all taste like dog shit.
Well Deb mine tasted great. Please enjoy this pie.

I love Dexter and was also intrigued by that episode with the key lime pie. I didn’t get to try one when I was in America, I might try your version!

Hi Mark,
To have a perfect match with Dexter maybe a rapsberry coulis would have been perfect with this key lime pie !!
I have eaten a lot of those when I was living in the US so it reminds me the good old time !! cheers !!

I have made this pie and loved it. It is the easiest thing to make and turns out great every time. I love Dexter. He is so bad but soooo good at the same time. Liked your post Mark, glad to see there is more than a few Dexter fans out there.

I may be the only person who has never seen Dexter except for a few episodes when we were visiting family members who had Showtime cable channel! I’ll just have to console myself with a slice of this dreamy, creamy key lime pie.

I love Dexter too and perked up when she asked for key lime pie. I’ve also become slightly obsessed with visiting Miami and trying Cuban food ever since getting hooked. Although I have to disagree, I think the books are wonderful!

Hello..Your pie looks yummy!
I was surprised to hear you have never heard of a key lime pie. Key limes are popular in USA. They grow in Key West, Florida ( most popular)-smaller and tarter than Persian limes. Can you get key limes or key lime juice in AUSSIE? Happy to send you a bottle of juice!

Oh this looks good! My sister made a lime cheesecake the other day, and the memory is still strong enough that I can almost taste your pie looking at it
Could you find key limes? I don’t think I’ve ever seen any in Perth.

I love key lime pie! I use a great recipe from Joe’s Crab Shack in Florida. They serve it very cold so the topping almost tastes like key lime cream gelato

A good key lime pie has been on my bake list for a while. Will have to give this one a whirl, thanks.
PS. How freakin awesome is Dexter! If you haven’t seen Season 4 yet, get your hands on it ASAP. It rivals season one in OMFG-ness.

I don’t know about Dexter, but my first experience of key lime pie was in the novel Heartburn by Nora Ephron. Ironically, she directed Julie and Julia last year. I like how your pie has condensed milk…yummy!

Can you believe it… I have all three seasons of Dexter on dvd, but I have not watched one episode yet. A lovely friend bought them for me for my birthday because she is convinced I would love the show. I think she maybe right.

Oh my, you will simply have to find some Key lime juice because it is not Key lime pie without it! I bring it back to Germany with me from the US since I can’t find it here and the pie is always a huge success whenever I make it. The “standard” US recipe is simpler even than yours: three egg yolks (no whites – I use them later to make macaroons), 1/2 cup juice, can of condensed milk. Mix till smooth. Pour into prepared crust, bake 15 minutes. Chill. Yummy it up!!
