I have talked before about my love for Brinner (for those who are uneducated, it is breakfast for dinner).  Brinner has a lot of charm as you can enjoy all those breakfast foods when you have time to prepare them, time to go shopping and most importantly are not hung over.

Sometimes I dream about a fast food chain that sells breakfast food 24 hours a day.  I wish McD’s sold hash browns and muffins all day as they are the best things on the menu.  But sadly at 10:31 each day I can no longer get these treats.

At my mythical Brinner joint, one of the star items would have to be the breakfast burrito.  For years I have heard about breakfast burritos on American TV shows had absolutely no idea what they were.  Being a curious cookie I decided to do some research.  General consensus was that a breakfast burrito must contain scrambled eggs and a flour tortilla.  To make mine a little more like a burrito I added some salsa, chilli, avocado and sour cream.  These were really tasty and will definitely make another appearance on my brinner table.

Breakfast Burrito

Makes 4

Ingredients

8 Eggs
50g Unsalted Butter
2 Chorizo Sausage, chopped into small cubes
½ cup Grated Cheese
Salsa
2 Tomatoes, finely chopped
1 Jalapeño Chilli, finely chopped
¼ Green Capsicum, finely chopped
¼ Red Onion finely chopped
4 Tortillas
½ Avocado
½ cup Sour cream

Method

  1. Mix all ingredients for the salsa together in a bowl and season with salt and pepper.
  2. In non-stick fry pan gently fry the chorizo until it is browned and slightly crispy, remove from the pan and drain on absorbent paper.
  3. In a small saucepan break 4 eggs and add butter.  Place over a low heat and continually stir until curds form.  Remove from heat and continue stirring until eggs solidify.  Add cheese and chorizo and stir to combine.
  4. Assemble burritos with avocado, salsa, eggs and sour cream.
